The Sicilian cannolo is one of Italy's most iconic pastries: an ultra-crispy fried dough tube, filled on the spot with sweet ricotta cream and sprinkled with crushed pistachios and chocolate chips. All the pleasure lies in the contrast, the crunchy shell and the fresh, melting center. In this alcohol-free version, the traditional Marsala wine is replaced with a bit of white vinegar, which gives the dough the same crispiness. Fill just before serving so the shells stay perfectly crunchy.
