Silikomart entremets molds

The Silikomart entremets molds are designed for perfect unmolding of frozen desserts: flexible silicone with no sticking, sharp edges, geometric shapes (round, square, oval, wave) or sculptural (signature chef designs). Capacities from 600 ml to 1500 ml for family entremets, 80 to 120 ml for individual portions.

3D trompe-l'œil molds and mini portions

The Silikomart trompe-l'œil molds allow you to create desserts that imitate nature: lemon, pistachio, peanut, cocoa pod, raspberry, peach. XXL sizes (700-750 ml) for signature cakes or mini (30 ml) for petits fours. The individual silicone molds offer 6 to 56 cavities per tray: mini financiers, mini cakes, jelly inserts, mini mousses.

Polycarbonate chocolate molds

Silikomart also offers polycarbonate chocolate molds for chocolatiers: molding bars, bonbons, figures, decorations. Transparent polycarbonate gives chocolate its signature shine after tempering. More rigid than silicone, for chocolate use only.

Is Silikomart silicone oven-safe?
Yes, Silikomart food-grade platinum silicone withstands temperatures from -60°C to +230°C. Compatible with conventional ovens, convection ovens, microwaves, freezers, and dishwashers. Avoid direct contact with flame and sharp utensils.
How to unmold an entremets cleanly?
Complete freezing before unmolding: minimum 4-8 hours at -18°C. Unmold cold for clean edges. Slide a finger between the silicone and the entremets to let air in, then gently press the bottom. Return to the freezer for 15 minutes if the entremets softens before glazing.
Do you need to grease a Silikomart mold?
No, platinum silicone does not require any greasing for classic pastries. For tempered chocolate in a polycarbonate mold: no greasing either (tempering ensures shine and easy release). For high-temperature cakes (financier, madeleine), a light release spray can help preserve details.
