Our letters and numbers collection gathers all decorative elements to personalize a cake: alphabet cookie cutters, number cookie cutters, silicone molds for letters and numbers, ready-to-use sugar letters and numbers, engraved stamps for imprinting on fondant. Number Cakes and Personalized Cakes

The number cake has been one of the most popular formats since 2018: a biscuit cut into a number shape (1, 2, 3...) covered with whipped cream, fresh fruits, macarons, and flowers. Patissland offers number templates made of food-grade plastic to cut the biscuit (3 to 5 numbers per set, height 25 to 35 cm). Complement with letter cookie cutters for name number cakes (children’s birthdays, personalized weddings).

Fondant and Isomalt Letters

Two techniques to create decorative letters. Fondant: roll out the fondant to 3 mm, cut with alphabet cookie cutters, let dry 24 hours in open air to harden. Coloring possible with gel food colors. Isomalt: melted sugar poured into silicone alphabet molds, cooled and unmolded in 30 minutes. Transparent or colored crystal effect, maximum shine. More technical but spectacular visual effect.

Engraved Stamps and Imprints

Engraved alphabet stamps allow imprinting on fresh fondant: names, messages, phrases. Heights from 1 to 3 cm for decorative letters, 5 to 10 cm for main inscriptions. Various fonts: script (handwritten), serif (classic), sans serif (modern). Apply on freshly rolled fondant, gently remove the stamp to keep a clean imprint.

What letter height for a cake?
Standard dimensions depending on use. Name on birthday cake: letters 2-4 cm high. Main wedding message (Mr & Mrs, Sweet 16): letters 5-8 cm. Large topper (number cakes, tall wedding cakes): letters 10-15 cm. General rule: letter height should represent 10-15% of the cake diameter.
Fondant or isomalt, which to choose for letters?
Fondant: easy to make, customizable coloring, matte finish or with luster dust, but can soften in the fridge (humidity). Isomalt: transparent or colored crystal effect, maximum shine, moisture resistant, but more complex technique (cooking at 165°C, handling hot). Professionals mix both depending on desired effects.
How long before the cake should letters be prepared?
Fondant letters need to dry 24-48 hours in open air to harden and hold when placed vertically on the cake. Isomalt letters harden in 30 minutes but must be stored in an airtight box with desiccant to avoid humidity. Prepare decorations the day before for a cake ready to assemble on the day.

Yes, Patissland offers ready-to-use sugar letters and numbers in various colors and sizes: white, black, gold, silver, multicolor. Store at room temperature in the original box. Keep 6 to 12 months after opening if the box is well sealed.
