Velvet sprays for entremets

The velvet spray is a must-have for the modern pastry chef. Made of cocoa butter + coloring + food propellant, it sprays a fine powdery layer on frozen entremets for a premium flocked effect. Application: entremets at -18°C, distance 25-30 cm, fine veil in several passes. All colors available: Valentine red, matte black, snow white, chocolate brown, pastels.

Shine and gold sprays

Food shine sprays provide a metallic shiny effect: edible gold, silver, copper, bronze. Direct application by fine spraying on fondant, sugar flowers, fresh fruits, chocolate figures. Ideal for high-end wedding cakes and festive ceremony decorations. Always check ingredients: European food sprays comply with regulation E174 (edible gold).

Release sprays and techniques

Food release sprays make it easier to remove cakes from complex molds (Bundt cake, sculptural molds). Composition: edible sunflower oil + flour in aerosol. More effective than traditional butter + flour. Gelling sprays fix decorations (glitter, flowers) on fondant. Glossy sprays provide a shiny mirror finish without royal icing.

Velvet spray without a gun, how does it work?
The food velvet spray in aerosol is a ready-to-use product: no pneumatic gun or water bath needed. Shake 30 seconds before use to homogenize. Spray at 25-30 cm distance on frozen entremets at -18°C. Several fine passes are better than one thick one (risk of droplets).
How many entremets does a 100ml spray cover?
A 100ml velvet spray covers about 8 to 12 entremets of 600-800g, or 4-5 uses in normal production. A 250ml spray covers 20-25 entremets. Plan orders ahead: 1 spray per main color + 1 neutral white spray in reserve.
Are food sprays safe?
Food sprays compliant with European regulations are allowed at normal doses. Cocoa butter (velvet sprays), edible oil (release sprays), gold E174 (gold sprays) are safe ingredients. Avoid sprays imported from outside the EU that may contain E171 (titanium dioxide) banned in Europe since 2022.
How to store sprays after opening?
Store for 12 months at room temperature (18-22°C), flat, away from heat (< 50°C) and direct light. Never expose to sun or above a hot plate (risk of explosion). Wipe the nozzle well after each use to avoid clogging.
