The kouglof is the symbol of Alsatian pastry: a soft brioche with raisins and almonds, recognizable by its fluted and twisted crown shape. Traditionally served at breakfast or as a snack, it pairs well with both coffee and tea. Its yeast dough, rich in butter and eggs, requires a bit of patience for rising, but the result is well worth it. The Patissland version is alcohol-free: the raisins soak in warm apple juice. Once unmolded and dusted with powdered sugar, the kouglof offers a tender and fragrant crumb, irresistible.
