At Mardi Gras, each region of France has its own doughnut: bugnes in Lyon, oreillettes in Provence... and merveilles in the Southwest. These golden diamond-shaped pastries, soft in the center and crispy on the edges, generously rolled in sugar, live up to their name.
Our version flavors the dough with orange blossom water, alcohol-free, so both kids and adults can enjoy them. The dough takes 20 minutes to prepare, rests for an hour, and frying takes only fifteen minutes. The hardest part will be waiting for them to cool... or not: they are best when warm.
