The Colour Mill collection brings together the complete range of the leading Australian brand in pastry coloring. Ultra-concentrated gel colorants based on edible oil, soluble both in fats (chocolate, cocoa butter, buttercream) and in classic preparations (fondant, royal icing). More than 50 colors: pastels, bright, metallic, natural. The global standard in modern cake design.

Why Colour Mill has become a reference

Colour Mill revolutionized pastry coloring in 2018 with its oil blend formula: a gel colorant based on edible oil that solves the historic gel vs. fat-soluble dilemma. One product works for buttercream, ganache, fondant, white chocolate, and royal icings. Ultra-concentration: 1 drop per 100g of mass. The brand is also known for its harmonious pastels (Lavender, Baby Pink, Sky Blue) which have become the signature of modern wedding cakes.

The Colour Mill palette

More than 50 colors in the catalog, grouped by families. Pastels: Baby Pink, Lavender, Sky Blue, Mint, Peach (the most used in cake design). Brights: Red, Cobalt, Raspberry, Lime, Sunshine. Natural: Beetroot, Avocado, Carrot. Metallics: Gold, Rose Gold (powders). Limited edition: seasonal collections (Halloween, Christmas, Valentine’s Day) renewed every year.

Practical use

Standard application: 1 to 2 drops per 100g of mass. Shake the bottle well before each use (the pigment may settle). For intense reds and black: dose 3-5 drops and let rest 30 minutes for intensification. The standard 20ml Colour Mill bottle lasts about 50 uses. A professional 100ml size is available for high-volume workshops.

Does Colour Mill really work in chocolate?
Yes, this is one of the brand’s unique features: its edible oil base is compatible with tempered white chocolate and cocoa butter. However, it is not suitable for very fluid milk and dark chocolates: pure fat-soluble colorants (Sugarflair Chocolate Drops) are preferred for these bases.
What is the difference with a classic gel colorant?
A standard gel colorant (Wilton, Sugarflair) is water-soluble: it solidifies chocolate. A fat-soluble colorant (Sicao, Mona Lisa) does not disperse in buttercream. Colour Mill is a hybrid edible oil formula compatible with both supports. Convenient: one bottle for 90% of cake design applications.
Are Colour Mill colorants gluten-free?
Yes, all Colour Mill colorants are gluten-free, lactose-free, kosher, and halal certified. The brand has become the international cake design standard especially thanks to this compatibility with special diets.
Storage and shelf life?
Store for 24 to 36 months at room temperature, away from direct light. Close the bottle tightly after use. If the colorant thickens slightly: warm in a lukewarm water bath for 2-3 minutes to make it fluid again. Do not refrigerate.
