Usage tips
Pour tempered chocolate, fluid tuile, or concentrated jelly in a thin layer and unmold cold: the fishbone can be placed vertically pierced into a mousse or laid flat on a creamy base. For savory dishes, a cuttlefish ink tuile pushes the marine theme to the limit.
Note: at a maximum thickness of 4 mm, the decoration remains fragile: produce a few pieces in advance to absorb breakage during handling.
