The Pavoni liposoluble white powdered coloring from the Chocolart range designed with chef Emmanuele Forcone is an opacifying food coloring that disperses in fats. White is intended for decoration and coating, coloring cocoa butter for spraying and decoration, as well as preparations such as marzipan, fondant, ganaches, and creams. It is also the ideal base for lightening and achieving pastel tones.

Tip: white is used to opacify and lighten. Add it to another shade to create pastels, or use it alone for an opaque base. Disperse in melted cocoa butter at around 35 to 40 degrees.

Used alone or mixed, white allows opacifying, lightening, and creating matte or pearly effects. It is the ally of sober finishes and wedding or baptism themes, and the base of all pastel tones.
