Usage tips
In dessert form, a chocolate-hazelnut mousse flocked with cocoa perfectly mimics the porcini; in savory dishes, mushroom mousses and forest cream take on a literal shape. Vary the sizes on the same plate to recreate the harvest. Flock on frozen pieces for the velvet texture of the cap.
Note: the thin stems of the mushrooms are fragile: unmold by pushing from the base of the cap, never by pulling on the stem.
