Braided brioche: shaping without hand-rolling technique

Usage tips
Let the dough rise directly in the mold up to 1 cm from the edge before baking: the braided relief forms during baking. Unmold while warm by gently pulling apart the flexible edges. For a cake, the pattern is revealed with a simple dusting of powdered sugar or a thin glaze that follows the grooves.
Note: very hydrated doughs rise quickly in silicone: watch the proofing so the braid doesn’t close up by rising beyond the edge.
