Stainless Steel Nozzle No. 125 Azucren: Petals, Roses, and Ruffles with the Piping Bag
The No. 125 nozzle from the Azucren brand is a stainless steel petal tip. Its slanted slot, narrow at one end and wide at the other, pipes fine petals at the base and open ones at the top, closely mimicking the movement of a natural flower. It complements the flower nozzles in the Nozzles and Piping Bags collection for decorating roses, drapes, and pleated borders.

Usage Tips
For a rose: work on a flower nail, with the wide part of the nozzle facing down and the narrow part up. The narrow end shapes the delicate edge of the petal. Build a central cone, then three tight petals, then five open petals by gradually tilting the nozzle outward. A firm buttercream gives the best results, to be complemented with floral decoration accessories.
For ruffles: place the wide part against the cake, moving back and forth steadily while moving upward or rotating around the base. Two-tone tip: place two cream colors side by side in the bag, tinted with gel colorings. The slot creates a sharp colored edge on each petal.
Note: clean the nozzle immediately after use with warm soapy water, running a small brush through the slot, and dry it right away to preserve the stainless steel’s shine. A perfectly clean slot ensures the sharpness of the next petal.
Frequently Asked Questions
What cream should be used with a petal nozzle?
A medium-firm buttercream: soft enough to pass through the slot, firm enough to hold the petal shape. Well-chilled whipped ganache also works.
Is a specific piping bag needed for this large nozzle?
A 40 to 46 cm bag is recommended to fit the nozzle and a comfortable volume of cream. Suitable sizes are in the Piping Bags collection.
What is the difference between No. 125 and a smaller petal nozzle?
The No. 125 slot is longer: taller petals, wider ruffles, fewer passes needed to cover a tier. Smaller sizes are suitable for cupcake flowers, while the 125 is for entremets and layer cakes.
