The Silikomart Sea kit includes 2 silicone mats to make preparations with puff pastry, shortcrust pastry, pâte morte, and chocolate, with a wave relief. The dough is sandwiched between the two mats, then baked directly with the incised texture.

The result modernizes classics like the millefeuille, whose wavy puff pastry gives a contemporary finish. Very flexible, the mats offer precise control at every stage, from lining to unmolding. They also serve as decoration for plated desserts.

Recipe: vanilla and strawberry wave millefeuille

For about 6 single-serving millefeuilles.

Ingredients

  • Puff pastry rolled to 2 mm: 1 piece
  • Whole milk: 500 g
  • Egg yolks: 100 g
  • Sugar: 100 g
  • Cream powder or cornstarch: 45 g
  • Vanilla pod: 1
  • Fresh strawberries: 200 g

Steps

  • 1.Roll the puff pastry to a maximum of 2 mm and freeze before use.
  • 2.Place the dough between the two Sea mats, press to imprint the wave relief.
  • 3.Bake at 180 degrees between the mats until golden brown and well-developed puff pastry.
  • 4.Prepare a vanilla pastry cream, cool, then smooth.
  • 5.Cut the puff pastry into rectangles, assemble alternating puff pastry, cream, and strawberries.
  • 6.Finish with a layer of puff pastry and some strawberries, chill before serving.

Care instructions

  • Clean with hot water and mild liquid soap
  • Dry carefully before storing
  • No greasing needed thanks to the non-stick surface

Note

For a clean puff pastry, use dough previously frozen and rolled to a maximum of 2 mm. Dough that is too thick loses the wave relief during baking.
