The Egg30 mold forms twelve 30 ml half-eggs in platinum silicone, for frozen desserts, chocolates, and baked pastries shaped like eggs. The clean release and smooth surface make it a standard for spring productions as well as petit fours all year round.

Usage tips
For whole eggs, assemble two frozen half-shells with a line of mousse or melted chocolate. In chocolaterie, mold thin shells to fill with praline or ganache. The smooth surface takes pastel velvet sprays and marbled finishes remarkably well.
Note: for regular chocolate shells, pour, turn over and drain the mold on a rack: thickness is controlled by draining time.
