Its role in the team

The Precise

For pastry chefs demanding uniformity

Pure aluminum conducts heat faster than steel and the perforations ensure a crispy base. Rimless sheet, it requires using a mat or parchment paper but offers a record temperature rise in return. This is the sheet for macarons and thin tart bases.

Features

  • Dimensions: 40 x 30 cm
  • Material: Perforated flat aluminum
  • Type: Baking sheet for pastry
  • Oven compatibility: Traditional ovens, convection, professional (up to 250°C)
  • Care: Hand wash recommended to preserve the coating
  • Origin: Recognized European brand, selected by Patissland

Usage tips

  1. Preheating: preheat the oven to the desired temperature before baking. For dry biscuits and viennoiseries, aim for 180-200°C; for sponge cakes and soft preparations, 160-170°C.
  2. Sheet preparation: line with parchment paper or place a silicone mat to facilitate unmolding and preserve the non-stick coating long-term.
  3. Oven positioning: place the sheet on the middle rack for balanced baking. For a more golden bottom, move down one level; for a more golden crust, move up.
  4. Out of the oven: immediately transfer pastries to a cooling rack after baking, otherwise residual heat continues to cook the bottom.
  5. Cleaning: let cool slightly, then clean with a non-abrasive sponge using warm soapy water. Avoid metal sponges that scratch the coating.

Care and lifespan

  • Wash by hand with a soft sponge and warm soapy water.
  • Dry completely before storing to prevent lime scale marks.
  • Avoid sharp metal utensils that scratch the non-stick coating.
  • With proper care, expected lifespan of 5 to 10 years with regular use.
