Ingredients
- •Red fruit puree: 500 g
- •Sugar: 70 g
- •Gelatin 200 bloom: 10 g
- •Cold water for hydration: 60 g
Steps
- 1.Hydrate the gelatin in cold water for 10 minutes.
- 2.Heat part of the puree with the sugar, add the drained and hydrated gelatin.
- 3.Add the rest of the cold puree, mix.
- 4.Pour into the square mat, level off.
- 5.Freeze until fully set.
- 6.Unmold and cut into inserts sized for entremets.
