Recipe: red fruit jelly insert

For a 325 x 325 mm square mat, to be cut into entremet inserts.

Ingredients

  • Red fruit puree: 500 g
  • Sugar: 70 g
  • Gelatin 200 bloom: 10 g
  • Cold water for hydration: 60 g

Steps

  • 1.Hydrate the gelatin in cold water for 10 minutes.
  • 2.Heat part of the puree with the sugar, add the drained and hydrated gelatin.
  • 3.Add the rest of the cold puree, mix.
  • 4.Pour into the square mat, level off.
  • 5.Freeze until fully set.
  • 6.Unmold and cut into inserts sized for entremets.

Care

  • Clean with hot water and mild liquid soap
  • Dry flat, store without folding to preserve the edges
  • No greasing needed thanks to the non-stick surface

Note

For clean unmolding of jellies and creamy layers, freeze the preparation before unmolding. The 325 x 325 mm square format makes it easy to cut regular inserts.
