The gauge 24 from the Azucren brand occupies the mid-range of floral wires: stiffer than the 26 to 30 reserved for fine petals, more manageable than the 18 and 20 used for armature. It is the all-purpose wire for medium-sized flowers, roses, anemones, ranunculus, and large petals mounted one by one. Usage tips

Use the 24 gauge as the main stem for medium-sized flowers and to support large petals mounted individually: outer petals of an open rose, fleshy sepals, supporting foliage. Dip the wire end in a little edible glue before inserting it into the base of the petal, then pinch the paste around the wire for a secure hold.

Assembly suggestion for an open rose: center and first petals on the central stem, then five outer petals each mounted on a half 24-gauge wire, assembled around the center by wrapping. This petal-by-petal construction gives the natural look expected on a wedding cake spray.

Note: floral wire is not edible and should never be inserted directly into a cake. Isolate each stem in an edible straw or dedicated pick before insertion, and remove the entire arrangement before cutting and serving.
